After visiting Long Island this weekend, my Dad sent me on my way with the opened can of cannelloni beans that I used to spread all over my Sunday morning bagel. Not usually a fan of Goya, I wanted to use these immediately and not waste them, giving them the task of becoming something wonderful (and getting the heck outta of my kitchen).
I made a mash of 3/4 can cannelloni beans, 3/4 pint box of leftover brown rice from our Chinese food takeout the night before, 1/2 of a week old white onion (grilled for 5 minutes in a little oil first), flax meal, water, a dash of oil, fresh cilantro, salt & pepper. I patted them into a burger shape and lightly fried them in a little olive oil.
I got 5 patties out of the mix! Perfect for a few lunches with some Farmer's Market half-dills and a side of relish. Yum!

I love your use of leftovers, nothing feels better than maximizing the life of a goya bean ;p
Way to turn leftovers into a gourmet meal! I think I'll have to check out my fridge for all of those leftovers I didn't think I wanted...
Woa, you just solved my dilemma of not wanting to keep eating those overly-processed "something tastes weird about these" Morningstar veggie burgers. You can totally make a bunch of these and freeze them for later too!
Can you make some of these for me PLEASE??
i love yr so efficient about what i call shelf "turn-around". get em in and cook em out.
Seriously... I want to hire you to come cook for me. Maybe that can be your Christmas present to me! These little concoctions look absolutely delicious and to think they came from leftovers!!
